Fruitastic Summer Salad

I’m headed over to my sister’s place this evening. We’re going to watch “Billy Elliott” (I’ve never seen it but it’s been on my list!) and enjoy dinner. I’m bringing what has become my go-to, easy-as-pie-and-tastes-just-as-good-too dessert this summer, the recipe for which actually came from my sister.


“Fruitastic Salad” (she made up that name, but it fits!)

1/2 cup loosely packed fresh mint
5 tablespoons sugar or splenda*
juice/pulp of one lime

Pulse mint, sugar and lime juice in blender or food processor until mostly liquified. You want the mint to be small.

(You can use whatever fruit you want, fresh or frozen, in whatever amounts, but here’s a good guideline):
1/2 lb seedless green grapes
2 firm-ripe medium peaches, cut into bite-sized pieces
1 package Strawberries, cut into bite-sized pieces
1 package Blackberries
1 package Blueberries
1 package Raspberries
1 package Snozberries**

Pour mint/sugar/lime juice mix over fruit, lightly toss. Refrigerate until serving time. Excellent with cool whip on top!

*I am leaving the sugar/splenda out completely. You don’t really need it.
**Just kidding. She threw that Willy Wonka reference in there, just for fun!

    Looks absolutely delicious! Did I ever tell you I made your charoset recipe for Easter dinner? I didn't have any left to take home…it was so good! So I feel pretty confident that this will be another winner. 🙂

    Really, no sugar? But then they won't be truly macerated. I'm so sad!

    I'm thinking this would be a great B-52s fit.
